INGREDIENTS:
2 pounds cooked sweet potatoes, cooled and peeled
2 table spoons soy sauce 3/4 cup flour (or more if needed) 1/2 teaspoon salt 1/2 teaspoon black pepper Butter or olive oil for frying
notes about the potatoes:
1 .You may use any color sweet potatoes. White yellow and purple ones tend to be more starchy, so you can try adding less flour than stated).
2. The best way to cook the potatoes for this recipe is to bake them, rapped in foil, in a 400 degree oven for 45-60 minutes until they're soft.
PREPARATION:
1. In a large bowl mash the sweet potatoes. Add the soy sauce, flour and salt and pepper and mix well. The batter should be sticky, but if you think it will be too difficult to work with, add another tablespoon of flour.
2. In a big frying pan, heat the butter or olive oil. The heat should be set on low.
With wet hands, create patties (about 2 inches in diameter) and place in frying pan. Let cook for about 5-7 minutes on each side until browned and set.
3. Let the patties cool. This allows them to retain their shape. You can even make them a day in advance and reheat in the oven. Serve with apple sauce or sour cream.
For the Dip:
1 cup sour cream
1 teaspoon mayonnaise
1 teaspoon lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
Combine all ingredients and stir well.
