Ingredients
Waffles
2 cups all purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup cocoa powder
2 tablespoons beet powder
1/2 cup sugar
2 eggs
1 3/4 cups buttermilk
1 teaspoon vanilla extract
1/2 cup melted butter (1 stick)
Cream Cheese Glaze
4 ounces softened cream cheese
3/4 cup powdered sugar
1 tablespoon milk
Chocolate Sauce
4 ounces dark chocolate (bar or chips, if using bar, chop chocolate)
1/3 cup heavy cream
Instructions
Sift all dry ingredients, except sugar, into a large bowl, as cocoa powder and beet powder tend to clump. Set aside
In a separate bowl, stir in buttermilk, sugar, eggs, vanilla and melted butter.
Pour buttermilk mixture onto dry ingredients and stir just until combined, some lumps are just fine. Set aside for at least 5 minutes.
Meanwhile make the glaze and sauce: Melt the chocolate with the cream in the microwave or using a double boiler. Keep at room temperature until used. For the glaze: mix cheese with milk until smooth. Add powdered sugar and stir quickly until dissolved into cheese mixture. Set aside.
Preheat waffle maker. Using a small cookie scoop (x2), or 1/4 cup measuring cup, scoop up some batter and place in the center of the waffle maker. place the top on and wait until it signals it's ready. Don't try to peek before it's ready!
Place waffles on a plate and drizzle with sauce and glaze.
if you'd like to keep your waffles warm, turn your oven on 250 degrees and place waffles on large sheet pan, before you glaze them.
