Baked White Fish

Baked White Fish with Herbs and White Wine

2 tablespoons butter

1.5 pounds white fish (flounder, cod, tilapia)

1/2 teaspoon salt

1 lemon

2 tablespoons of the any of the following fresh herbs: rosemary, oregano, dill, parsley or mint), chopped

1/2 cup white wine


preheat oven to 450 degrees

in an oven-safe baking dish layer thin slices of lemon and top with thin pads of butter to line the length of the pan. Sprinkle 1/2 of the chopped herbs on the butter and place fish on top, sprinkle with salt, the rest of the herbs and drizzle with olive oil.

Place in oven. after 7 minutes, take out of the oven and add 1/4-1/2 cup of white wine to the base of the dish cook for another 5 minutes or until fish appears to flake. removed from the oven and serve hot or at room temperature.


serve with rice, pasta or potatoes.
