Ingredients:
2 pounds potatoes (peeled or just scrubbed and washed)
1 large onion, peeled
2 eggs
1 tablespoon any kind of flour
2 teaspoons salt
1 teaspoon black pepper (optional)
Oil for frying
Preparation:
Grate the onion with a box grater or using a food processor. Set aside. Grate the potatoes and then wash the grated potatoes. Squeeze out all liquids out of the potatoes. You may use a dish towel to help you do that. Add the grated onion, eggs, flour salt and pepper if using.
Heat the oil in a large frying pan. And prepare a dish lined with paper towels beside it.
When the oil is hot, take a spoonful of the batter and place gently in the pan. Flatten the latke gently in the pan. Repeat until the pan in full and lower the heat to medium. When the latke start becoming golden flip them. Take them out into the dish, and let paper towel absorb some of the oil. Before placing a new batch of patties in the pan, take out any little pieces of potato left in the oil to prevent it from burning. Repeat until you use all the batter.
Serve hot with apple sauce or sour cream. You may want to make this a day in advance, cool in the fridge and reheat in a 400-degree oven for 10 minutes.
