For the dough
3 cups all purpose flour
1 cup confectioner’s sugar
1 teaspoon baking powder
pinch salt
14 tablespoons softened butter (1stick plus 6 tablespoons)
1 egg + 1 yolk
1 teaspoon vanilla extract (optional)
1 teaspoon citrus zest (optional)
filling:
jam, chocolate chips or Nutella
Dairy Free Dough
4 cups flour
2 teaspoons baking powder
½ teaspoon salt
2/3 cup oil
2 eggs
1 yolk
1 cup sugar
Juice of 1 orange
1 teaspoon Zest
1 teaspoon vanilla
instructions:
combine all dry ingredients in a large bowl and whisk well.
add butter, eggs, vanilla and zest, stir first with a spoon, and then knead by hand for a few minutes until a soft dough is reached.
alternatively, place dry ingredients in a food processor bowl, turn on until well combined and then add the wet ingredients. Process until your reach a soft dough.
place dough in a large ziploc bag or cover with plastic wrap and let rest in fridge for an hour.
preheat oven to 375 degrees.
remove dough from fridge and roll out to 1/4 inch thickness.
using a round cookie cutter or a glass, create 3.5 inch rounds.
place 1/2 teaspoon jam or 5-8 chocolate chips in the middle of each round. Fold to create a triangle and place on a parchment lined cookie sheet.
bake for 12-16 minutes until golden brown.
sprinkle with some powdered sugar, and let cool.
store any left overs in a air tight container for up to 2 weeks.
