Hamantaschen

For the dough


3 cups all purpose flour

1 cup confectioner’s sugar

1 teaspoon baking powder

pinch salt

14 tablespoons softened butter (1stick plus 6 tablespoons)

1 egg + 1 yolk

1 teaspoon vanilla extract (optional)

1 teaspoon citrus zest (optional)

filling:

jam, chocolate chips or Nutella


Dairy Free Dough

4 cups flour

2 teaspoons baking powder

½ teaspoon salt

2/3 cup oil

2 eggs

1 yolk

1 cup sugar

Juice of 1 orange

1 teaspoon Zest

1 teaspoon vanilla


instructions:

  1. combine all dry ingredients in a large bowl and whisk well.

  2. add butter, eggs, vanilla and zest, stir first with a spoon, and then knead by hand for a few minutes until a soft dough is reached.

  3. alternatively, place dry ingredients in a food processor bowl, turn on until well combined and then add the wet ingredients. Process until your reach a soft dough.

  4. place dough in a large ziploc bag or cover with plastic wrap and let rest in fridge for an hour.

  5. preheat oven to 375 degrees.

  6. remove dough from fridge and roll out to 1/4 inch thickness.

  7. using a round cookie cutter or a glass, create 3.5 inch rounds.

  8. place 1/2 teaspoon jam or 5-8 chocolate chips in the middle of each round. Fold to create a triangle and place on a parchment lined cookie sheet.

  9. bake for 12-16 minutes until golden brown.

  10. sprinkle with some powdered sugar, and let cool.

  11. store any left overs in a air tight container for up to 2 weeks.
