Cheesy Cauliflower Mini Muffins

Ingredients

• 1 small head cauliflower

• 2 1⁄4 cups all-purpose flour

• 2 tsp baking powder

• 1 tsp salt

• 1⁄2 tsp baking soda

• Pinch ground nutmeg

• 1 cup milk

• 2 eggs

• 1⁄2 cup olive oil

• 1 cup grated freshly grated cheese (I used sharp cheddar and smoked gouda)

• 2 green onions, finely sliced

• Sprinkle of smoked paprika


Instructions

1. Preheat the oven to 400oF degrees. Line a mini muffin tin with cupcake liners or coat

generously with non-stick spray.

2. Finely chop the entire head of cauliflower OR using the pulse function on a food

processor, process half of the cauliflower until finely chopped. Set aside and repeat with

remaining cauliflower.

3. Whisk the flour, baking powder, baking soda, salt, and nutmeg in a large bowl. Set aside.

4. Whisk the milk, eggs and oil in a medium sized bowl. Combine with flour mixture and

fold until just combined, careful not to over mix. The batter should be on the thicker

side.

5. Add cauliflower, cheese, and green onion to batter. Stir to combine.

6. Spoon batter into prepared muffin tins. Sprinkle with paprika.

7. Bake for 15 to 20 minutes or until golden and a skewer inserted in center comes out

clean. Transfer to a wire rack to cool. Serve warm or at room temperature.
