For the meatballs:
1 pound ground beef or turkey (if it’s frozen, don’t forget to thaw it)
1 carrot, grated
1 onion, grated
2 celery stalks, grated
1-2 cloves garlic, minced
Big handful of fresh herbs or greens (parsley, basil, celery leaves, Swiss chard, kale), finely chopped
NOTE: you may want to use your food processor to grate/process all your vegetables and herbs.
1/3 cup bread crumbs
1 egg
1/3 cup olive oil (or other vegetable oil)
Salt and pepper
Instructions
Preheat oven to 400ºF. Spray a large cookie sheet with cooking spray.
Mix together the grated carrot, celery, onion, bread crumbs, garlic, egg, herbs, salt, and pepper in a large mixing bowl.
Add in ground beef and mix gently until combined. Form into 1-inch balls and place on prepared cookie sheet.
Bake in preheated oven for 15-20 minutes, or until meatballs are browned and cooked through.
For the sauce:
1 - 28 oz crushed tomatoes (with or without basil)
1/4 cup olive oil
2 cloves garlic
1 teaspoon dries herbs such as oregano, basil or thyme
1 teaspoon salt
Instructions
In a medium saucepan, heat olive oil over medium-high. Add garlic, cook for about 1 minute. Add crushed tomatoes. Season with salt and pepper. Bring to a boil, then reduce to a rapid simmer. Cook, stirring often, until sauce thickens, about 15 minutes. Stir in oregano leaves.
transfer the baked meatballs into the sauce, reduce heat to simmer, and cook covered for 20-30 minutes.
serve with pasta, rice or another side.
